Pumpkin Seed Salad Dressing
Ingredients
- 1/2 cup raw pumpkin seeds
- 1 2/3 cups water - divided
- 1/3 cup lemon juice
- 2 teaspoons granulated onion
- 3/4 teaspoon salt
- 1/2 teaspoon granulated garlic
- 1 teaspoon dried dill weed
- 1 – 2 tablespoons fresh cilantro, parsley, or dill - optional
Instructions
- Place pumpkin seeds and 1 cup water in pint jar or sealable container and place in refrigerator for at least 8 hours or overnight.
- Transfer soaked pumpkin seeds to colander and rinse with fresh water. Drain well. Place drained pumpkin seeds in blender.
- Add lemon juice, 2/3 cup water, granulated onion, salt, and granulated garlic in blender. Blend on high speed until very smooth and creamy.
- Scrape down sides of blender, replace lid, and blend again. Mixture should be very smooth with no graininess.
- Add dried dill weed, fresh herbs (if using), and pulse just until mixed.
- Chill. Dressing will separate in the refrigerator. Stir before using.
Notes
Add 1/2 teaspoon maple syrup if you like a sweeter dressing.
Add a tablespoon or two of water if you like a thinner dressing.
