Pumpkin Seed Salad Dressing

Ingredients

Instructions

  • Place pumpkin seeds and 1 cup water in pint jar or sealable container and place in refrigerator for at least 8 hours or overnight.
  • Transfer soaked pumpkin seeds to colander and rinse with fresh water. Drain well. Place drained pumpkin seeds in blender.
  • Add lemon juice, 2/3 cup water, granulated onion, salt, and granulated garlic in blender. Blend on high speed until very smooth and creamy.
  • Scrape down sides of blender, replace lid, and blend again. Mixture should be very smooth with no graininess.
  • Add dried dill weed, fresh herbs (if using), and pulse just until mixed.
  • Chill. Dressing will separate in the refrigerator. Stir before using.

Notes

Add a splash more lemon if you like a tangier dressing.
Add 1/2 teaspoon maple syrup if you like a sweeter dressing.
Add a tablespoon or two of water if you like a thinner dressing.
