Instructions
Place pumpkin seeds and 1 cup water in pint jar or sealable container and place in refrigerator for at least 8 hours or overnight.
Transfer soaked pumpkin seeds to colander and rinse with fresh water. Drain well. Place drained pumpkin seeds in blender.
Add lemon juice, 2/3 cup water, granulated onion, salt, and granulated garlic in blender. Blend on high speed until very smooth and creamy.
Scrape down sides of blender, replace lid, and blend again. Mixture should be very smooth with no graininess.
Add dried dill weed, fresh herbs (if using), and pulse just until mixed.
Chill. Dressing will separate in the refrigerator. Stir before using.
Notes
Add a splash more lemon if you like a tangier dressing.
Add 1/2 teaspoon maple syrup if you like a sweeter dressing.
Add a tablespoon or two of water if you like a thinner dressing.
