Pumpkin seeds, also known as pepitas, are edible seeds that come from the inside of a pumpkin.
While you can harvest your own seeds from the inside of a pumpkin that you grow or purchase, the kind of pumpkin seeds usually sold for consumption are a special kind that are have a more meaty flesh and are “hulled”. These special kind of seeds are typically green in color.

Are pumpkin seeds a healthy food?
Very much so! Pumpkin seeds are packed with nutrients like vitamin E, magnesium, zinc, iron, protein, calcium, manganese, fiber, carotenoids, phytosterols, flavonoids, and more.

Different Varieties of Pumpkin Seeds
The type of pumpkin seeds that you can purchase are typically from a certain cultivar of pumpkin grown specifically for the seeds. They are hulled and green in color. These are less fibrous than the pumpkin seeds you get from regular pumpkins.
You can also purchase pumpkin seeds that look more like the ones that you would find in a pumpkin that you grow in a garden. These seeds are white in color.
If you are harvesting pumpkin seeds straight from your own pumpkin, be aware that some of the larger seeds are quite tough. The smaller, tender ones are more enjoyable to eat.
Pumpkin seeds come either raw or roasted. I recommend the raw ones as they are a healthier option.
How to Store Pumpkin Seeds
Pumpkin seeds should be stored in the refrigerator or freezer. The natural fats in nuts and seeds can go rancid quickly if not kept cool.
