Not only is this dressing easy, but it’s your ticket to healthier meals – complete without the complimentary preservatives, additives, vinegar, GMO’s, sugar, oil, EDTA, and monoalginatediglyceridedisodium found in its refined, processed, grocery-store cousin. (Okay, I made that last one up, but it’s not too far off!)

How to Serve Creamy Cashew Salad Dressing

This vinegar-free vegan salad dressing is remarkably versatile. It tastes great not only on salads (like this Power Salad), but it also makes a fabulous sandwich spread. We often use it in place of mayo. We also like it drizzled (okay, poured) over vegetables. It can make any yucky veggie taste great! And it’s wonderful on these Beet Burgers.

How to Store this Healthy Vinegar-Free Vegan Salad Dressing

Because this dressing doesn’t contain any preservatives, it doesn’t keep as long as commercial dressings. In the refrigerator, it will keep for about 5 days. For longer storage, you can freeze it. However, it separates, so be sure to stir it well after thawing.

Creamy Cashew Dressing

This deliciously creamy, remarkably healthy,and incredibly slimming salad dressing is free from oil and vinegar – two ingredients that are harmful to the health.

YIELD 1.5 cups

Ingredients

Instructions

  • Wash cashews in a colander under very hot water. Drain well.
  • Place drained cashews and remaining ingredients in blender and blend until very, very smooth. This may take several minutes.
    (Water amount may be adjusted slightly if a thinner or thicker dressing is desired.)
  • Chill.
    Dressing will separate some in refrigerator. Stir before using.

Notes

Be sure to buy only fresh cashews and store them in the freezer until ready to use. Old cashews can have a bad taste.
Keeps in the refrigerator for about 5 to 6 days.

    Very easy to do. I added some everything bagel seasoning and One pod of frozen basil. That added a depth of flavor, but the original recipe is excellent.
