This fresh Avocado Tomato Salad is easy-to-prepare and can also be used as salsa.

Avocados. Perhaps the best food in all of creation. I really do like them, and they’re very good-for-you – but I think we’ve talked about that already.

But, really, this simple and fresh Avocado Tomato Salad has amazing flavor. And it even has a ripple effect – everything I put on my plate after the salad tasted 10 times better because it was seasoned with the leftover dressing.

What to Serve with Fresh Avocado Tomato Salad

Made with simple, full-of flavor ingredients, this delicious salad is chock full of flavor (especially if you choose garden tomatoes or an heirloom variety) and makes the perfect summertime salad. It’s great with:

corn-on-the-cob

hummus

burgers

Brazilian Beans

Chickpea Salad Sandwich

Baked Breaded Okra

Creamy Asparagus, Pasta, and Potatoes

Kale White Bean Pizza

Cheesy Vegan Broccoli Rice Casserole

or just by itself with a side of whole-grain, crusty bread

Is this Fresh Avocado Tomato Salad Healthy?

Avocados offer 19 vitamins, minerals, and beneficial plant compounds. some slimming fiber, and help with weight loss.

Tomatoes contain lycopene – a powerful antioxidant that reduces your risk of cancer. Plus they are a great source of vitamins A and C.

And the onions in this delicious salad offer you a generous amount of a flavanoid called quercetin.  Quercetin protects against cataracts, cardiovascular disease, and cancer.

How to Store this Fresh Avocado Tomato Salad

This salad is best made fresh. Tomatoes get mushy in the refrigerator and avocados turn brown. So I recommend making this salad no more than an hour before serving, adding the diced avocado in at the last minute. But no worries! This salad is super easy and quick to prepare.

Tips to Prep Ahead

If you do want to make this salad ahead of time, you can prepare the salad according to the instructions but leave out the avocado and tomato. Add these ingredients immediately before serving.

Avocado Tomato Salad

This zippy salad can also be used as salsa.
Prep Time 20 minutes
Course Salad, Side Dish
YIELD 4 servings

Ingredients

  • 2 cloves garlic, minced
  • 1/4 medium red onion, diced small
  • 2 tablespoons lime juice - scant
  • 1 tablespoon olive oil - optional
  • 1 tablespoon minced fresh cilantro
  • 1/4 cup organic fresh corn kernels - optional
  • 1 teaspoon granulated onion
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried basil
  • 2 medium ripe avocados
  • 2 small to medium tomatoes, diced
  • 1/2 teaspoon salt - or to taste

Instructions

  • Mix together all ingredients, except avocado, tomato, and salt, and mix well.
  • Immediately before serving, cut avocado in half and remove pit. Dice flesh.
  • Gently stir in diced avocado, tomato, and salt.
    Serve.

Notes

Make Ahead Tip: Salad can be made ahead of time by leaving out the avocado and tomato and adding these immediately before serving.
