Sugar-Free, No-Bake Cranberry Pecan Bar Ingredients
These sugar-free, no-bake bars are made from healthy, whole-food ingredients like coconut, cranberries, dates, and pecans. Every bar provides you with a load of health-giving and slimming nutrients!

Among foods that are richest in health-promoting antioxidants, berries like cranberries rank right up there at the top of the list. Cranberries are a great source of resveratrol. Resveratrol is a natural compound found in some foods that has been found to be antiviral, neuroprotective, and anti-inflammatory! And it’s a natural cancer fighter.

Sugar-Free, No-Bake, Cranberry Pecan Bars
Ingredients
- 1 cup whole, pitted dates - (not dates rolled in oat flour)
- 1 cup unsweetened, shredded coconut - divided
- 1 cup dried cranberries - (I used fruit-juice sweetened dried cranberries)
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla
- 1/2 cup coarsely chopped raw pecans
Instructions
- If dates are very hard, place in saucepan with 2 tablespoons water, cover, bring to boil, and then remove from heat. If dates are soft, go to step 2.
- Place dates, 1/2 cup coconut, dried cranberries, salt, and vanilla in a food processor and process until all ingredients are finely chopped and mixture clumps together. (This takes about 2 minutes in my food processor.)
- Add remaining coconut and process until coconut is chopped fine and mixture begins to stick together again. (About 30 seconds.)
- Add pecans and pulse a few times until mixed.
- Press mixture into an 8-inch x 8-inch dish. (I like to line my baking dish with parchment paper to make it easier to remove the Cranberry Pecan Bars.) Makes 16 squares. Can be stored in freezer.
