This sugar-free, oil-free, vegan cake with chocolate-like frosting is actually a healthy alternative to fattening sugar-filled cake.

When you are trying to eat a healthy diet, birthdays and other special occasions can quickly derail your best efforts.

What if you could have a cake that was not only lusciously delicious, but also healthy? A sugar-free, gluten-free cake that contains no artificial sweeteners, no agave, no dairy, no eggs, no oil, no shortening, no butter, and no vegan butter? (And – as if this wasn’t a big enough challenge – what if you also wanted the cake to be baking powder free?)

This cake is a bit out-of-the-ordinary. But it’s a fun alternative to traditional birthday cake and everyone will love its luscious flavor!

What I Love About This Sugar-Free Birthday Cake

This is such a fun birthday cake! It looks like a regular cake, and tastes incredibly rich and luscious, but when you cut into it, surprise! This yummy birthday cake is made with whole-grain waffles. It’s a fun and delicious waffle cake!

(It’s also healthy – but no one will know it!)

How to Serve

Serve this sugar-free waffle cake just like you would serve any other birthday cake – topped with a rich and creamy sugar-free frosting and maybe a scoop of sugar-free ice cream on the side.

Is this Sugar-Free Cake Healthy?

Most sugar-free cakes are made with no-calorie or low-calorie sweeteners that are associated with health problems, like weight gain, digestive issues, blood clots, heart attack, stroke, and more.

Also, there are also health concerns with agave and stevia, so I wanted to avoid those as well.

So, I developed this recipe to be free from these alternative sweeteners.

This delicious, sugar-free cake is made with healthy, whole-food ingredients. It contains no refined sugars or sweeteners. No refined flours. And no refined oils.

How to Store

This cake is best made and eaten fresh. But in the unlikely event that you have leftovers, you can keep the cake in the refrigerator. (See FAQ section.)

How many days in advanced can I make this sugar-free cake?

This sugar-free cake is best made and eaten fresh. If you would like to do some of the prep work ahead of time, the frosting can be made up to 3 months ahead of time and kept in the freezer until ready to use.

Can I freeze this sugar-free cake?

The frosting is very freezer-friendly, but the cake is best eaten fresh. If you have to freeze leftovers, I recommend reheating the cake in a medium oven for a few minutes to freshen the texture. It won’t look so great after reheating, but it will taste wonderful.

Instructions

  • Place one waffle on a serving plate and spread a layer of Sugar-Free Carob Frosting on waffle on top.
  • Place another waffle on top of frosting. Repeat until all waffles have been stacked.
  • Using a knife or spatula, spread remaining frosting on sides and top of waffle cake.
  • Serve.

Notes

1. The prep time does not include making the waffles. If you don’t already have the waffles prepared, add 45 minutes to the prep time.
2. This cake is best served fresh with waffles made that day.
If you would like to do some of the prep work ahead of time, the frosting can be made up to 3 months ahead of time and kept in the freezer until ready to use.
