Place one waffle on a serving plate and spread a layer of Sugar-Free Carob Frosting on waffle on top.
Place another waffle on top of frosting. Repeat until all waffles have been stacked.
Using a knife or spatula, spread remaining frosting on sides and top of waffle cake.
Serve.
Notes
1. The prep time does not include making the waffles. If you don't already have the waffles prepared, add 45 minutes to the prep time.2. This cake is best served fresh with waffles made that day.If you would like to do some of the prep work ahead of time, the frosting can be made up to 3 months ahead of time and kept in the freezer until ready to use.
