Most granola -> Full of sugar and spice and nothing nice (for health).

Contrary to popular belief, granola is not a health food as it usually contains a boatload of unhealthy fats and sugar (or other sweeteners). You may as well eat a bowl of Fruity Pebbles. With oil on top.

But I really like granola, so I set out to make a healthier version – one that was sugar-free and oil-free. After a little experimenting, I came up with this Sugar-Free, Oil-Free Apple Buckwheat Granola. It was an instant hit!

My favorite thing about this delicious breakfast cereal – besides that it is so good for you – is the big, chunky, crunchy clusters. (Did I mention that already?) Isn’t chunky granola just the best!?!

Oil-Free, Sugar-Free, Apple Buckwheat Granola

You’ll enjoy lots of big, chunky, crispy clusters in this luscious sugar-free and oil-free granola.

Cook Time 1 hour 20 minutes

YIELD 3 cups (9 ounces)

Ingredients

Instructions

  • Place almonds, buckwheat grits, oats, and salt in food processor.
  • Cut apple into large chunks and add to food processor. (No need to peel apple.) Pulse just enough to coarsely chop almonds and apple.
  • Add coconut, maple syrup, apple juice concentrate, and vanilla, and pulse just until mixed.
  • Stir in walnuts.
  • Preheat oven to 300°F. Line a medium (9-inch x 13-inch) baking sheet with parchment paper. Evenly distribute mixture onto baking sheet. Mixture will be very moist.
  • Bake at 300°F for 20 minutes. Reduce temperature to 225°F and continue baking for 1 hour or until granola is dry and lightly browned.
  • When granola is very dry, remove from oven and allow to cool.
  • Stir in dried fruit. Transfer to a sealable container and keep in a cool, dry place.

Notes

Dried apples can be purchased or you can make your own!
