Place almonds, buckwheat grits, oats, and salt in food processor.
Cut apple into large chunks and add to food processor. (No need to peel apple.) Pulse just enough to coarsely chop almonds and apple.
Add coconut, maple syrup, apple juice concentrate, and vanilla, and pulse just until mixed.
Stir in walnuts.
Preheat oven to 300°F. Line a medium (9-inch x 13-inch) baking sheet with parchment paper. Evenly distribute mixture onto baking sheet. Mixture will be very moist.
Bake at 300°F for 20 minutes. Reduce temperature to 225°F and continue baking for 1 hour or until granola is dry and lightly browned.
When granola is very dry, remove from oven and allow to cool.
Stir in dried fruit. Transfer to a sealable container and keep in a cool, dry place.
