So, these Sugar-Free Breakfast Bars are … well … sugar-free. Please, do not pursue me with digital daggers if these bars don’t taste like the other berry bar that you found on the internet that was made with a pound of butter and 2 cups of sugar.

My goal was to create a berry bar that was healthy enough to eat for breakfast – and still tasted delicious

Not sweet enough for you? Put the dagger down and add a little date sugar or maple syrup to the oat mixture.

These bars make a great breakfast by themselves or with some fresh fruit. We also like them served along side this yummy Harvest Oatmeal or this Breakfast Rice.

Can I use fresh berries?

These bars work best with frozen berries, which is convenient because you may not always have fresh berries on hand, but you can always have some frozen berries tucked away in your freezer.

Can I freeze these Sugar-Free Berry Breakfast Bars?

Yes, these bars freeze great.

Heat them in a low oven before serving or simply thaw and eat.

Sugar-Free Breakfast Berry Bars

Ingredients

Instructions

  • Preheat oven to 375°F.
  • Place dates and apple juice concentrate in a saucepan. Cover with a tight-fitting lid and bring to boil. Reduce heat and simmer over low heat for 2 to 3 minutes or until dates are very soft.
  • Place almonds in food processor and process until finely ground.
  • Add coconut, oats, and salt and pulse just until mixed. Transfer to a large mixing bowl and push to one side of the bowl.
  • When dates are softened, transfer dates and apple juice concentrate mixture to food processor. Add vanilla and process to make a fairly smooth date paste. Transfer date paste to empty side of mixing bowl. Do not mix yet! Set aside for 5 minutes to allow the date paste to cool. (This prevents the bars from being gummy.)
  • Meanwhile, place berries in food processor. (No need to wash out food processor.) Pulse until berries are chopped medium-fine. Set aside.
  • Mix together date paste and dry ingredients just until oats are evenly moistened with date puree. Do not overmix. I find the best way to do this is to mix it quickly with a fork and then finish with hands by crumbling the large pieces apart with fingers.
  • Press 3 cups of the oat mixture evenly into an oiled 8 x 8 baking dish.
  • Spread chopped fruit mixture over oat mixture in baking dish. Press fruit mixture down with a fork.
  • Distribute remaining oat mixture over top of berry mixture and very gently pack down.
  • Bake uncovered at 375°F for 40 to 45 minutes or until nicely browned.
  • Serve warm or at room temperature.

Notes

Be sure to use quick oats not rolled oats in this recipe.

    These Sugar-Free Berry Breakfast Bars are really tasty, not sickening sweet like some bars, and they’re easy and fun to make. What a perfect addition to your breakfast routine, especially if you’re craving a sweet treat.
    Skip the coffee and doughnuts, and eat a couple of these instead.

    I made these for tomorrow’s breakfast, but I’m having to restrain myself from digging into them tonight. I’ve had them before, so I know how delicious they are. And healthy. And they’re fun to make. I highly recommend these breakfast berry bars, especially if you have children and don’t want to pump them full of sugar.

  3. I would love to try this recipe, but I can’t find sugar free frozen berries. They all seem to be loaded with extra sugar. What brand, and where do you buy the frozenn berries?

    1. That’s odd. I’ve purchased sugar-free frozen berries from Meijer, Kroger, Walmart, Aldis, and other stores. It has not been difficult to find them. What store are you shopping at? Maybe (hopefully) they’re just out of stock right now.

  4. WalMart and/or Fry’s. I looked undee the nutritional info, and they all have arount 9 to 11 gms of sugar.

    It does NOT say sugar added, though. Is that sugar count just the natural sugar in berries? So, if it specifies No Sugar Added, does that mean they are OK?

    1. Yes, if it says “No Sugar Added”, then the only sugar in the berries is the naturally-occurring sugar which is actually very healthful. So those options are good ones 🙂

  5. I’d love to try these, but do you think that they would be less tasty if I used water (or another liquid) in place of the frozen concentrated apple juice? It’s not available where I live and we are trying to cut out fruit juice sugar sources as well.
