Vegan Almond Cheese

This delicious Vegan Almond Cheese is oil-free, gluten-free, cholesterol-free, dairy-free, and nutritional-yeast-free.

I’ve been eating this yummy almond cheese with just about everything lately. Almond cheese and strawberry jam on crackers, almond cheese and figs, almond cheese and grapes, almond cheese with apples (my favorite), and almond cheese in a veggie wrap. And even almond cheese on my oatmeal.

This stuff is yummers.

Is Cheese Healthy?

If you’re trying to eat healthy, regular dairy cheese isn’t really a good option. Every bite of dairy cheese gives you a hefty dose of hormones, cholesterol, and saturated fat. And research shows that the consumption of dairy cheese can contribute to poor cognitive performance (i.e. your brain doesn’t work so great when you eat cheese).

Is cheese good for weight loss?

Cheese is high in calories and fat and contains absolutely no fiber whatsoever – a good recipe for weight gain. It doesn’t matter whether it’s raw cheese, goat cheese, cottage cheese, Gouda cheese, or moose milk cheese – there’s really no cheese that will fit into a healthy diet. Even most reduced-fat or low-fat cheese is still high in saturated fat and cholesterol and contains no fiber

Cheese was one of my favorite foods (Ice cream was the other.) And as bad as cheese is for the body, it’s difficult to quit eating cheese … unless you have a delicious substitute. However, while there are lots of vegan cheese alternatives (nearly every grocery store carries them), I’ve yet to find a truly healthy one. Most are loaded with many highly processed ingredients.

Plus (in my opinion) they all taste a little … um … weird.

Almond Cheese

This delicious vegan almond cheese is dairy-free, oil-free, gluten-free, cholesterol-free, and nutritional-yeast-free. It's luscious on crackers or bread and with apples, figs, or grapes.
Prep Time 15 minutes
Cook Time 5 minutes
Soaking Time 8 hours
Course Vegan Cheese
YIELD 2.5 cups

Ingredients

  • 1 1/2 cups whole raw almonds - See note.
  • 1/2 cup lemon juice - or less if you prefer a milder cheese
  • 7/8 cup water
  • 1 tablespoon tahini
  • 1/4 teaspoon granulated garlic
  • 1 1/2 teaspoons salt

Instructions

  • Soak almonds overnight or up to 24 hours. Drain and rinse.
  • Remove skins from almonds. (See note.)
  • In a high-powered blender, blend almonds, lemon juice, water, tahini, granulated garlic, and salt.
  • Transfer mixture to a saucepan. Mixture will be very, very thick and it will seem like you couldn't cook it, but it does fine.
    Cook over medium heat 4 to 5 minutes stirring constantly. (Cooking the cheese thickens it. Cheese will thicken more as it cools.)
  • Transfer to a container and chill.

Notes

Squeezing the soaked almonds between your fingers will cause the skins to slip right off. Or to eliminate this step, you can use blanched almonds (almonds that have already had their skins removed).
This recipe makes a tangy cheese. If you prefer a milder cheese, replace some of the lemon juice with water.

    This is one of my favorite vegan cheeses to make, despite the fact that I don’t like removing the skins from the almonds! I think I’ll buy blanched almonds next time I make this. Having said that, I love the flavor and consistency, and I love that every ingredient in this cheese contributes to good health. I recommend this vegan cheese to anyone who likes to eat good stuff!
