Dill Salad Dressing
Simple and creamy, this dressing is a much healthier alternative to commercial store bought dressings.
1. Wash cashews in a colander under very hot water. Drain well.
2. Place drained cashews and remaining ingredients, except dill, in blender and blend until very, very smooth. Blend until very smooth and creamy. (A heavy-duty blender works best for this recipe; other blenders may not get the mixture smooth enough.)
3. Stir in dill.
Chill. Stir before using.
Keeps in the refrigerator for about 5 to 6 days.
