Wash cashews in a colander under very hot water. Drain well.
Place drained cashews and remaining ingredients in blender and blend until very, very smooth. This may take several minutes.(Water amount may be adjusted slightly if a thinner or thicker dressing is desired.)
Chill.Dressing will separate some in refrigerator. Stir before using.
Notes
Be sure to buy only fresh cashews and store them in the freezer until ready to use. Old cashews can have a bad taste.Keeps in the refrigerator for about 5 to 6 days.
