Avocado Spinach Salad with Pumpkin Seed Dressing

Ingredients

  • 6 ounces fresh baby spinach leaves
  • 3 ounces baby lettuce or torn lettuce leaves
  • 1/2 medium sweet onion
  • 1/4 cup raw pumpkin seeds
  • 2 tablespoons chopped fresh dill or cilantro - optional
  • 2 cloves fresh garlic - optional
  • 1/3 cup Jennifer's Kitchen Vegan Almond Cheese - optional
  • 1 – 2 medium avocados
  • Jennifer's Kitchen Pumpkin Seed Salad Dressing

Instructions

  • In a large salad bowl, combine the spinach and lettuce.
  • Slice onion into thin slivers and add to salad.
  • Add pumpkin seeds, dill or cilantro, Almond Cheese, and fresh, crushed garlic.
  • Right before serving, cut avocado in half lengthwise and remove pit. Slice or dice avocado flesh and add to salad.
    Top all with dressing.
    Serve immediately.

1. We tested this recipe with different dressings from Jennifer’s Kitchen, and our favorites are Creamy Pumpkin Seed Salad Dressing, Creamy Cashew, Creamy Italian, and Dreamy Dill. But feel free to use your favorite dressing.
2. We also tested this recipe with lots of fresh, crushed garlic, and I LOVED it, but not everyone is as crazy about garlic as I am. You may want to add more garlic if you’re a garlic fan, or leave it out if you are not.

Make-ahead tip

You can wash and dry spinach and greens ahead of time and keep them in an airtight container in the refrigerator for several days. Placing a paper towel in the bottom of the container to absorb any extra moisture will help it last longer.

You can also cut the onion and keep it in an airtight container for up to 3 days. (I use a glass container so it doesn’t absorb onion flavor/smell.)

The avocados should be added just before serving. And the dressing should be added when ready to eat or the salad tends to wilt.

Variations

Here’s how you can customize this delicious Avocado Spinach Salad recipe:

Sprinkle some of this amazing Vegan Almond Cheese over the salad.

Switch up the salad dressings. This Creamy Italian Dressing is a reader favorite!

Sprinkle some hemp hearts (hemp seeds) over the salad.

Can I double this recipe?

Absolutely. This salad recipe works great for a crowd. You can double it, triple it, quadruple it, .…  Just be sure to serve the dressing on the side. Adding dressing to a salad ahead of time will make the salad turn soggy.

Can I make this salad ahead of time?

Yes. Prep all of your ingredients, except the avocado, ahead of time and store them in the refrigerator separately. Cut and add the avocado right before serving to prevent it from turning brown.
