Dairy-Free Soy-Free Vegan Dip

This dip is the cheesecake of all dips – thick and creamy, rich and luscious, maxed on flavor, goes well with anything.

Healthy and Slimming Dip

Most dips are quite fattening, but this one can be enjoyed without worrying about calories or fat. Not only is this Creamy Cashew Dip dairy-free and gluten-free, but it’s also loaded with fiber – something that no dairy dip can boast!

So while this recipe lists the serving size as 2 tablespoons (only because that’s standard for how dips are listed), please, don’t be shy – dig right in!

From the moment this delicious dip enters your mouth, to the last creamy drop you lick out of the bowl (not that I would know anything about licking it out of the bowl), this dip will have you hooked.

What to Eat with this Dip

While my hopes are that this dip will inspire you to eat more vegetables, it also tastes great with chips … or with crackers … it’s even yummy spread on toast … and in place of mayonnaise on veggie sandwiches … mixed into hot pasta … I’ve even mixed a teaspoon or two into a bowl of this Spinach Soup and that was delish.

One Last Note

I try to test most of my recipes to see if they freeze well, and, to my surprise, this dip handled the cold like a champ.

Creamy Cashew Chive Dip

Not only is this Creamy Cashew Dip dairy-free, soy-free, and gluten-free, but it’s also loaded with fiber – something that no dairy dip can boast!

Ingredients

Instructions

  • Wash cashews in a colander under very hot water. Drain well.
  • Place drained cashews, water, lemon juice, tahini, oil, granulated onion, salt, and granulated garlic in blender and blend well. (A heavy-duty blender works best for this recipe; other blenders may not get the mixture smooth enough.) Scrape down sides of blender and blend again until mixture is very, very smooth.
  • Add dried minced onion and blend until mixed.
  • Stir in dried parsley and chives. Chill.

Notes

This recipe works best with a heavy duty blender, such as a Blendtec or a Vitamix. Do not divide this recipe; the full amount is needed for the ingredients to blend well in a blender.
Yield: 2 cups (16 2-tablespoon servings)

    I don’t really want to use granulated onion or dried minced onion- can I use fresh onion and fresh garlic instead? I don’t like onion or garlic powders but am happy to chop and blend fresh rather than powdered

    1. Hi Paul,
      I haven’t tried this recipe with fresh onion. The taste will definitely be different, and I suspect the texture will be different as well. But, of course, you could give it a try.

    I found the onion powder over powered the dish. I feel the chives alone would have been enough… any ideas how to salvage this? I hate to throw things out but the onion powder is overwhelming to me…

    1. Hi Hayley,
      Sorry it didn’t turn out great for you. Did you use onion powder or granulated onion. Onion powder has a stronger and harsher flavor than granulated onion.

      To salvage it, you could make another batch without the onion and then combine the two.
      Or, you could blend up some cashews with water and lemon and salt and mix that into the dip.

      1. Hi Jennifer, thank you for your suggestions. I did use onion powder where stated (and just omitted the onion granules as I didn’t have them.) I will try and increase the amount and omit the onion entirely in hopes to tone it down a little for my taste preference! I gave a blob to my partner to try and he liked it, so he may just use it on a baguette as is! Maybe it’s just me…

        I’ve just re read the recipe… garlic powder (which I used) wasn’t stated at all. My bad. I had no idea they tasted so different! But I do now! I tried to go back to change my rating since it was my error, but not sure how… if you know how, happy to change since this isn’t a problem with your dish, but of my substitute! Sorry again. It’s been a big week… (ok… I added another rating to hopefully balance it out) Will try the dish again as stated!
