Regular and even so called “light” mayonnaise can easily derail your diet. This mayo not only offers some fiber, but also is very low in refined fat and contains no vinegar, thus making it perfect for your weight loss plan.

2/3 cup raw cashews
2 – 4 tablespoons water – depending on how thick you want the mayo to be
1/4 cup lemon juice
1 tablespoon raw sugar or evaporated cane juice, scant
1 cup mashed silken tofu (about 8 ounces)
1 1/4 teaspoons salt
1 1/4 teaspoons granulated onion
1/2 teaspoon granulated garlic
1/8 teaspoon celery salt
1 tablespoon olive oil or coconut oil – optional
1 teaspoon apple juice concentrate – optional
1. Wash cashews in a colander under very hot water. Drain well.
2. Place cashews, water, lemon juice, and sugar in blender and blend on high speed until very smooth and creamy. (A heavy-duty blender works best for this recipe; other blenders may not get the mixture smooth enough.)
3. Add remaining ingredients and blend until smooth.
Be sure to buy only fresh cashews and store them in the freezer until ready to use. Old cashews make cashew mayo taste terrible.
