Peeling a tomato with a knife or a peeler can be messy and time consuming. Fortunately, there is an easier way.
1. Bring a medium-large pan of water to boil.
2. Wash tomatoes thoroughly.
3. When the water comes to a boil, gently place tomatoes in the pan. (I use a slotted spoon for this.)
4. Leave the tomatoes in the boiling water for 45 to 60 seconds or until skin begins to crack.
5. With a slotted spoon, remove the tomatoes and place on a plate to cool (or place in a bowl of very cold water).
6. When tomatoes are cool enough to handle, gently cut into the peel of the tomato with a knife or pinch the skin between your fingernails to tear the skin. The skin should peel right off.
If you have a salad spinner, dice tomatoes and place them in the spinner. Give them a few spins—most of the seeds are now separated. Otherwise, scoop out seeds with a knife or spoon.
